Taco-Tuesday: Korean style. Red cabbage, picked raddish, kimchi, basil, sriracha, sauteed tofu, hummus (to use like a glue at the base), shredded carrot, cilantro and finished off with sriracha.
Korean-style salad. Mixed greens, blanched asparagus, grilled sirloin steak, poached egg and kimchi
Pan-poached chicken breast, corn/quinoa/brown rice pasta with olive oil, squeeze fresh lemon juice, salt, pepper with mixed greens and veggies with poppyseed dressing
Squash Fritters ( shredded courgette/zucchini, tapioca starch - helps to keep them light, fluffy and crunchy)
Latke’s (potato pancakes) using purple potatoes, onions, topped off with homemade apple sauce (with cinnamon) and 2%-full fat Greek yogurt (instead of sour cream)
Roasted Veggies. Coat with Olive oil, truffle salt and bake (350*) for 1.5-2 hours.
Langostinos with spaghetti squash and pesto/greek yogurt sauce. Finished with squeeze of fresh lemon juice
Breakfast burrito: back bacon, avocado, egg white scramble on toasted corn tortilla and finished with sprinkle of Tapatio
Oven-baked (450*) Sock-eye Salmon with mayo-dill & lemon sauce
Shrimp Scampi, “spiralized” daikon raddish, cilantro, pan-fried tofu, cucumber, grilled onions, fresh parsley with sesame oil drizzle
